Grilled Peaches
This is such a fun summer BBQ sweet treat. Cut the peaches in half and remove the pit, brush olive oil on the open half then grill them for several minutes. For added sweetness, spread a thin layer of honey and cinnoman on the peach. Enjoy!
Whipped Banana
Depending on how many people you are serving, freeze cut up peeled bananas overnight. Put the banana chunks in the blender with ice and a few splashes of oat milk (one splash for every banana). Pulse the blender until you have a desired consistency. Serve in a bowl.
Lemon/Orange Water Ice
In order to create true Italian ice, sugar must be added with lemon juice and water. However, I have created sugarless lemon ice and it was not half bad! Cut the skin off the lemon/orange, and removed the seeds. Place the fruit in a blender with 2 cups of ice and a splash of water. Blend until you are satisfied with the consistency. It can be quite tart, but is almost zero calories.
Frozen Mangos
This is my favorite after dinner treat. I buy a large bag of mango chunks and freeze them. I take out 6-8 pieces and allow them to partially thaw out. Great all year around!
Strawberry Whip
I am a huge fan of strawberries, which are naturally very sweet. Cut up strawberries into fairly small pieces. Place in a glass bowl where you can mash them with a fork. Add honey and plain greek yogurt. Mix together and enjoy!
