This is one of my favorite warm salads, so I figured I would share with you. Salads do not always have to be served cold with dressing. Mixing a few ingredients together in a pan is all it takes! A good substitute for meat is nuts if you want to take a break from animal products intermittently. This is a good side salad to a dinner, a great lunch or throw an egg on top and call it brunch.
Ingredients: 4 cups of Kale, ½ cup of walnuts, 1 red onion, olive oil, salt and pepper
Mix chopped onions and olive oil in pan on medium for 4-5 minutes. Slowly add in the kale 1 cup at a time. Add drops of olive oil as needed. Add walnuts last. Usually it takes about 8-10 minutes to come to a perfect consistency.
*Goat cheese is an amazing addition if you please!

Benefits of Onions: Decrease cancer risks due to the inhibition of free radical formation, may help mood and depression
Benefit of Walnuts: highest antioxidant compound than any other nut, rich in omega 3 which can reduce heart disease, decreases inflammation.
